My absolute favorite Chicken Salad recipe. I used the poaching liquid as a substitute for some of the mayo and added a bit of dried tarragon to the salad mix. But like some others, I didn't have fresh tarragon, so decided to simmer dried tarragon in chicken broth for a few minutes then poached the chicken in the liquid.
